At least I know I didn't get a faulty RPi3B+ !!

I thought mine might have been caused due to a resources drain while initially loading the libraries and downloading the metadata, but that is complete and the issue still exists.
I did attach the RPi to a SmartThings plug so I can at least turn it off and on remotely -- but it is not a long-term solution.
FWIW I did try a different SD chip and 3 different brand new Rpi3B+ with the same result. Perhaps that is the issue and a downgrade to the last stable RPi3 is in order.

A small update on my side. I can't explain why, but I'm not experiencing reboots since last Saturday.
Did you observe the same?

No, I gave up on the project as it is too unreliable for primetime.
I will boot it up this afternoon and give it another go --
